I found a high spec 2012 MacBook Air motherboard with a destroyed case. and I have a baseline MacBook Air 2015 and wondered if I can put the motherboard in my shell and use it that way. I understand if it works I will need a different SSD but I can take care if that

Just in reviewing the guides it does appear the logic board and the connections are the same. So its worth the gamble to try. You may need to switch out the display over.
